Sausage and Apples Maple Agrodolce Ingredients:
- 2 tablespoons canola oil
- 1 pound quality pork breakfast sausage links, sliced
- 1 large sweet onion (like Vidalia), halved and thinly sliced
- 1 large Granny Smith apple, cored, halved, and thinly sliced
- 1 large Gala apple, cored, halved, and thinly sliced
- 1/2 cup pure Grade B maple syrup
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup apple cider vinegar
- 1 teaspoon finely chopped fresh thyme
- Chopped fresh flat-leaf parsley, as needed
Cheddar-Black Pepper Waffles Ingredients:
- 1 1/2 cups all-purpose flour
- 3/4 cup grated sharp white Cheddar cheese
- 2 teaspoons baking powder
- 2 teaspoons granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1/4 teaspoon coarsely ground black pepper
- 1 1/4 cups buttermilk
- 1/3 cup (5 tablespoons plus 1 teaspoon) unsalted butter, melted, plus extra for greasing waffle iron
- Several dashes of hot sauce
- 2 large eggs
Instructions:
- Make the sausage and apples maple agrodolce: Heat 1 tablespoon canola oil in a cast-iron skillet over medium-high heat. Add sausage slices and cook, stirring occasionally, until well browned, 8-10 minutes. Remove and set aside.
- In a medium nonstick skillet, heat remaining 1 tablespoon oil over medium heat. Add onions, toss to coat, then add apples, 2 tablespoons maple syrup, salt, and pepper. Cook, stirring often, until soft and caramelized, about 10 minutes. Stir in 1 tablespoon vinegar, remove from heat, and mix in sausage, thyme, and parsley. Transfer to a bowl and keep warm.
- Return nonstick skillet to low heat; add remaining 6 tablespoons maple syrup and 3 tablespoons vinegar. Swirl to make a glossy agrodolce sauce.
- Preheat oven to 200F with a baking rack on a sheet for warm waffles.
- Whisk flour, Cheddar, baking powder, sugar, baking soda, salt, and pepper in a large bowl.
- In another bowl, whisk buttermilk, melted butter, hot sauce, and eggs. Fold wet into dry until just combinedlumps are okay!
- Preheat waffle iron, brush with butter, and cook 1/3 cup batter per waffle until golden and crisp, about 4 minutes. Keep warm in oven; repeat with remaining batter.
