Charred Green Beans with Spicy Cashew Sauce

Ingredients
- 1 1/4 pounds green beans, trimmed
- 1 tablespoon coconut oil
- 1/4 cup water
- 2 tablespoons cashew butter
- 1 tablespoon soy sauce
- 1 tablespoon warm water
- 2 teaspoons lime juice
- 2 teaspoons Sriracha
- Fresh cilantro, chopped, for garnish
Instructions
- Heat coconut oil in a large skillet over medium-high heat.
- Saut the trimmed green beans until crisp-tender.
- Add water and cover the skillet. Cook until the beans develop light char marks, about 3 to 5 minutes.
- Transfer the charred beans to a serving platter.
- In a small bowl, whisk together cashew butter, soy sauce, warm water, lime juice, and Sriracha until smooth.
- Spoon the spicy cashew sauce over the green beans.
- Finish with a generous sprinkle of chopped fresh cilantro.
