Directions

  1. Warm 1 tablespoon olive oil in an oven-safe skillet over medium heat.
  2. Add 1 1/2 pounds carrots (halved lengthwise if large), sprinkle with 1/2 teaspoon kosher salt and freshly ground black pepper.
  3. Cook, tossing occasionally, until carrots begin to brown, about 5 minutes.
  4. Transfer skillet to a 475F oven and roast until charred and tender, 20-25 minutes.
  5. Finish with a generous dollop of pesto and ricottaserve hot and savor the magic!
