Ingredients

  • 4 (8-ounce) New York strip steaks, trimmed of any visible fat
  • 4 tablespoons coarsely cracked black peppercorns (adjust more to taste)
  • Salt as needed
  • 1 tablespoon pure olive oil
  • 1/4 cup quality Kentucky bourbon
  • 1/2 cup red wine
  • 1/2 cup brown stock
  • 1 tablespoon unsalted butter

Instructions

Cook Mode: Keep screen active while cooking.

  1. Press the cracked pepper onto the steaks, then season with salt.
  2. Heat the olive oil in a cast-iron skillet for about a minute before adding the steaks.
  3. Cook over medium heat for 3 minutes per side for medium-rare doneness.
  4. Remove steaks to warmed plates.
  5. Pour out excess fat from the pan and carefully add the bourbon off the heat.
  6. Lower the heat and reduce the bourbon until the pan is almost dry.
  7. Pour in the red wine, increase the heat to medium, and reduce the liquid by half.
  8. Add the brown stock, bring to a boil, and cook for 6 minutes.
  9. Finish by swirling in the butter.
  10. Take off the heat and spoon the sauce over the steaks before serving.
