Bourbon Pepper Steak Recipe

Ingredients
- 4 (8-ounce) New York strip steaks, trimmed of any visible fat
- 4 tablespoons coarsely cracked black peppercorns (adjust more to taste)
- Salt as needed
- 1 tablespoon pure olive oil
- 1/4 cup quality Kentucky bourbon
- 1/2 cup red wine
- 1/2 cup brown stock
- 1 tablespoon unsalted butter
Instructions
Cook Mode: Keep screen active while cooking.
- Press the cracked pepper onto the steaks, then season with salt.
- Heat the olive oil in a cast-iron skillet for about a minute before adding the steaks.
- Cook over medium heat for 3 minutes per side for medium-rare doneness.
- Remove steaks to warmed plates.
- Pour out excess fat from the pan and carefully add the bourbon off the heat.
- Lower the heat and reduce the bourbon until the pan is almost dry.
- Pour in the red wine, increase the heat to medium, and reduce the liquid by half.
- Add the brown stock, bring to a boil, and cook for 6 minutes.
- Finish by swirling in the butter.
- Take off the heat and spoon the sauce over the steaks before serving.
