Ingredients
- 2 pounds top sirloin roast, trimmed
- Kosher salt and fresh cracked black pepper
- 3 tablespoons garlic infused olive oil
- 1 onion, chopped
- 2 cups good quality beef stock
- 1 1/2 cups sour cream
Instructions
- Cut the beef into thin strips about 2 inches long and 1/2-inch thick, slicing against the grain. Pat the meat dry and season with salt and pepper as desired.
- In a large saut pan, heat 2 tablespoons of the garlic-infused olive oil over medium-high heat. Add the beef and sear until browned on all sides, about 3 to 5 minutes. Remove the meat from the pan and set aside.
- If needed, add another tablespoon of oil to the pan, then add the chopped onions. Cook until they turn a light golden color, stirring occasionally and adding 1/4 cup of beef stock to help deglaze the pan.
- Stir in the remaining beef stock and return the beef along with any accumulated juices to the skillet. Simmer for 10 minutes.
- Stir in the sour cream and gently heat through, being careful not to let the mixture boil. Taste and adjust seasoning if needed.
- Transfer the finished stroganoff to a serving dish and serve immediately. Enjoy!
