Ingredients

  • 2 pounds top sirloin roast, trimmed
  • Kosher salt and fresh cracked black pepper
  • 3 tablespoons garlic infused olive oil
  • 1 onion, chopped
  • 2 cups good quality beef stock
  • 1 1/2 cups sour cream

Instructions

  1. Cut the beef into thin strips about 2 inches long and 1/2-inch thick, slicing against the grain. Pat the meat dry and season with salt and pepper as desired.
  2. In a large saut pan, heat 2 tablespoons of the garlic-infused olive oil over medium-high heat. Add the beef and sear until browned on all sides, about 3 to 5 minutes. Remove the meat from the pan and set aside.
  3. If needed, add another tablespoon of oil to the pan, then add the chopped onions. Cook until they turn a light golden color, stirring occasionally and adding 1/4 cup of beef stock to help deglaze the pan.
  4. Stir in the remaining beef stock and return the beef along with any accumulated juices to the skillet. Simmer for 10 minutes.
  5. Stir in the sour cream and gently heat through, being careful not to let the mixture boil. Taste and adjust seasoning if needed.
  6. Transfer the finished stroganoff to a serving dish and serve immediately. Enjoy!
