Whip up this irresistible Banana-Yam Casserole from Marcela Valladolida sweet, crunchy delight that's easy to make and perfect for feeding a crowd. Ingredients

  • 2 tablespoons unsalted butter, for greasing the baking dish
  • 1 1/2 pounds yams, peeled and sliced lengthwise into 1-inch thick pieces
  • 5 ounces (around 32) sweetened round crackers (recommended: Maria Crackers) or graham crackers
  • 3/4 cup whole almonds, roughly chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons (3/4 stick) cold unsalted butter, cut into cubes
  • 4 large ripe yet firm bananas, peeled and halved lengthwise
  • 1 (10 1/2-ounce) bag mini marshmallows

Instructions

  1. Preheat the oven to 400F. Grease the bottom of a 13x9x2-inch glass baking dish with 2 tablespoons of butter. Set aside.
  2. Place the yams in a heavy medium pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook until tender, about 10 minutes. The yams will become a brighter color.
  3. In the meantime, combine the crackers, almonds, cinnamon, and salt in a food processor. Pulse a few times until the mixture is coarsely combined but not completely ground. Add 6 tablespoons of butter and pulse until the mixture forms lumps slightly bigger than peas. Chill this streusel topping in the refrigerator until needed.
  4. Arrange half of the bananas and yams in a single layer on the bottom of the prepared dish. Sprinkle half of the streusel and half of the marshmallows over the fruit and yams. Repeat the layering once more. Bake until the marshmallows turn golden, approximately 25 minutes. Serve warm.
