  • 6 tablespoons unsalted butter, softened
  • 10 apples, peeled, cored, and diced into 1-inch pieces (Jonathan, Honey Crisp, Red Rome, or Gala varieties work well)
  • 1 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 sheet of store-bought pie dough
  • 1 large egg, beaten
  • Vanilla ice cream, for serving
