Ingredients

  • 1 cup pineapple juice
  • 1 cup low sodium chicken broth
  • 1/3 cup orange juice
  • 1 tablespoon butter
  • 1 (6-ounce) box long grain and wild rice mix, with seasoning packet
  • 1/4 cup slivered almonds, toasted

Instructions

  1. Combine the pineapple juice, chicken broth, orange juice and butter in a saucepan and bring to a rolling boil.
  2. Stir in the rice mix and the included seasoning packet, return to a boil.
  3. Cover the pot tightly, lower the heat to medium-low or low, and simmer until the liquid is absorbed, about 25 minutes.
  4. Fluff the rice with a fork, fold in the toasted slivered almonds, and serve warm.
