Ingredients

  • 1 medium pumpkin (about 10 pounds, for about 1 cup pumpkin seeds)
  • 1 teaspoon olive oil
  • 1/2 teaspoon kosher salt

  • A 6-quart air fryer

Instructions

  1. Preheat your 6-quart air fryer to 360F and get ready to transform those pumpkin seeds into an irresistible, crispy snack you'll crave all season long!
  2. Cut a 10-inch circle from the top of the pumpkin and lift it off. Scrape out the pulp and seeds with a large spoon into a bowl. Separate the seeds from the stringy pulp, rinse them in a colander under cold water, and shake drydamp is fine, no need to blot or they'll stick!
  3. Toss the seeds with olive oil and salt in a clean bowl for perfect flavor. Spread in a single layer in the air fryer basket, then air fry for about 15 minutes, shaking every 5 minutes until they're lightly golden and irresistibly crunchy.
