Ingredients
- 1 cup whole-wheat flour
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1 stick (8 tablespoons) unsalted butter, cold and cut into small pieces
- 1 cup buttermilk, chilled
Instructions
- Preheat the oven to 450F.
- In a large bowl, whisk together the whole-wheat flour, all-purpose flour, baking powder, baking soda, sugar, and salt.
- Cut the cold butter into the flour mixture with a pastry blender or your fingers until the mixture resembles pea-sized crumbs.
- Pour in the chilled buttermilk and stir just until the dough is moistened and there are no dry patches.
- Turn the dough onto a lightly floured surface and knead gently 45 times without overworking.
- Pat or roll the dough into a 1-inch-thick slab and cut out biscuits with a cutter, gathering scraps and repeating until all dough is used.
- Place the biscuits about 1 inch apart on an ungreased baking sheet.
- Bake 1214 minutes, until the tops are golden brown.
