Ingredients
- 2 cups plain oat milk
- 1/4 cup flaxseed meal (or finely ground flaxseed)
- 2 tablespoons cornstarch
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- One 1-pound loaf of day-old sourdough bread
- 4 tablespoons unsalted vegan butter
- Confectioners' sugar, for garnish
- Warm maple syrup, for serving
Instructions
- In a casserole dish or pie plate, whisk together the oat milk, flaxseed meal, cornstarch, sugar, cinnamon, and vanilla extract until well mixed. Let this batter rest for 15 minutes to thicken its magic.
- While the batter rests, cut the bread into slices roughly 3/4-inch thick, removing the ends of the loaf.
- Heat a large nonstick pan over medium heat. Melt 1 tablespoon of vegan butter, swirling to coat the surface. Dip 3 slices of bread into the batter, pressing gently for 10 seconds on each side. Let excess batter drip off before placing them carefully into the pan. Cook without moving until each side is golden and crisp, about 2 to 4 minutes per side.
- Continue cooking the remaining bread slices with the rest of the butter and batter, adjusting the heat as needed. Sprinkle with confectioners' sugar and serve warm with maple syrup for a heavenly finish.
