Turon (Sweetened Jackfruit and Plantain Dessert Rolls)

Ingredients
- 1 can (20 ounces) sweetened jackfruit, drained from syrup
- 2 very ripe plantains with darkened, almost black skins, ends trimmed (see Cook's Note)
- 10 lumpia or spring roll wrappers
- 1 large egg
- 1/2 cup light brown sugar
- 1/2 cup clarified butter
- Optional: Ice cream or whipped cream for serving
Instructions
- Drain the sweetened jackfruit and shred into thin strips. Peel plantains, cut each crosswise in half, then slice each half lengthwise into four pieces. Unroll spring roll wrappers one at a time, keeping others covered with a damp paper towel to avoid drying.
- Whisk egg with 1 tablespoon water for egg wash. Place one wrapper with a point facing you. Layer 1-3 plantain pieces lengthwise in center, top with shredded jackfruit in a line, and sprinkle lightly with brown sugar.
- Fold bottom point over filling. Brush top point edges with egg wash, fold sides inward to meet in middle, then roll tightly into a cigar shape. Repeat with remaining wrappers. Brush rolls all over with remaining egg wash and sprinkle with leftover brown sugar.
- Heat clarified butter in saucepan over medium-low. Fry turon in batches until golden brown and caramelized. Serve warm with optional ice cream or whipped cream for an irresistible treat.
Cook's Note: Darker plantain peels mean sweeter, softer fruitperfect for this crispy, caramelized delight!
