Ingredients

  • 6 ounces smoked salmon, chilled
  • 6 ounces fresh spinach, trimmed, cleaned, and dried
  • 1 large bunch fresh chives, finely chopped
  • 3 tablespoons mayonnaise
  • 1 to 2 tablespoons white wine vinegar
  • Salt and freshly ground black pepper, to taste
  • 1 kirby cucumber, peeled and sliced lengthwise into thin ribbons using a vegetable peeler
  • 6 slices high-quality country French bread, sliced diagonally and grilled or broiled

Instructions

  1. Cut the smoked salmon into thin strips and keep chilled until ready to serve. In a bowl, combine the fresh spinach with half of the chopped chives, creamy mayonnaise, and tangy white wine vinegar. Season generously with salt and freshly ground pepper to your liking.
  2. Chill your serving plates for a refreshing presentation. Arrange the vibrant spinach mixture on each plate, then artfully layer the delicate salmon strips in the center. Finish with a flourish of the remaining chives and elegant cucumber ribbons, and serve alongside the warm, crispy crostini for the perfect textural contrast.
