Ingredients
- 6 ounces smoked salmon, chilled
- 6 ounces fresh spinach, trimmed, cleaned, and dried
- 1 large bunch fresh chives, finely chopped
- 3 tablespoons mayonnaise
- 1 to 2 tablespoons white wine vinegar
- Salt and freshly ground black pepper, to taste
- 1 kirby cucumber, peeled and sliced lengthwise into thin ribbons using a vegetable peeler
- 6 slices high-quality country French bread, sliced diagonally and grilled or broiled
Instructions
- Cut the smoked salmon into thin strips and keep chilled until ready to serve. In a bowl, combine the fresh spinach with half of the chopped chives, creamy mayonnaise, and tangy white wine vinegar. Season generously with salt and freshly ground pepper to your liking.
- Chill your serving plates for a refreshing presentation. Arrange the vibrant spinach mixture on each plate, then artfully layer the delicate salmon strips in the center. Finish with a flourish of the remaining chives and elegant cucumber ribbons, and serve alongside the warm, crispy crostini for the perfect textural contrast.
