- Preheat oven to 250F (120C) get ready for irresistibly crunchy peanuts!
- In a medium bowl, whip 1 egg white until frothy. Stir in cup sugar, 1 tbsp water, 1 tsp kosher salt, 1 tsp cumin, tsp cayenne, tsp garlic powder, and tsp ancho chili powder. Toss in 1 lb peanuts and coat every nut perfectly.
- Line a baking sheet with parchment or spray with nonstick. Spread peanuts in a single layer. Bake 45 minutes, stirring every 15 minutes for even, golden perfection no sticking allowed!
- Cool completely on the sheet, stirring occasionally. Serve in a bowl and wow guests with optional dried red chiles for spicy flair.
