Pork Loin with Coca-Cola BBQ Sauce Recipe

Grilled Pork Loin:
- 2 1-pound trimmed pork loins
- 1 tbsp garlic salt
- 1 pinch black pepper
- 1 tbsp Cajun spice
- Olive oil
- 1 tbsp fine brown sugar
Coca-Cola Barbecue Sauce:
- 2 tbsp canola oil
- 3 tbsp diced jalapeno
- 2 tbsp diced garlic
- 3 cups ketchup
- 1/4 cup chicken stock
- 1 cup orange juice
- 1/2 cup molasses
- 1/4 cup Coca-Cola
- 1/2 cup brown sugar
- 1 tbsp liquid smoke
- 1 tsp garlic salt

Instructions:
- For the pork loin: Generously season the pork loins with garlic salt, Cajun spice, and brown sugar. Rub with olive oil. Grill on medium heat for 8-12 minutes, turning every couple of minutes. In the final 5 minutes, brush with BBQ sauce, rotating to caramelize it perfectly onto the meat.
- Remove from heat, slice into juicy portions, and serve with extra sauce for dipping.
- For the sauce: Heat oil in a saucepan over gentle heat. Add garlic, shallots, and jalapeno; saut 2 minutes. Stir in all remaining ingredients. Simmer until flavors meld, then adjust sweetness to your taste. This bold sauce elevates every bite!
