Ingredients
- 4 center-cut, bone-in rib pork chops (approximately 3 pounds)
- 2 teaspoons kosher salt
- Freshly ground black pepper
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- 1/4 cup bourbon
- 1/2 cup low-sodium chicken broth
- 1 tablespoon grainy mustard
- 3 tablespoons heavy cream
Instructions
- Fire up a large skillet over medium-high heat for a minute until it's screaming hot. Pat those pork chops dry, season one side generously with salt and pepper, then add the oil. Let it shimmer before laying the chops seasoned-side down. Sear for 3-4 minutes until golden. Toss in the butter, cook another minute, season the other side, flip, and cook 4-5 more minutes until firm and hitting 140F. Rest them under loose foilpure magic ahead!
- Dump excess fat, take the pan off heat, and pour in the bourbon (stand back!). Tilt to flame it up, reduce by half, then add broth. Simmer 3 minutes, scraping those tasty bits. Whisk in mustard and cream; simmer 1-2 minutes until it clings to a spoon. Season to perfection.
