- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, seeds removed and thinly sliced
- 1 tablespoon tomato paste
- 12 ounces spicy Italian sausage (remove casings if using links)
- 12 ounces sweet Italian sausage (remove casings if using links)
- 8 slices provolone cheese
- 1/4 cup mayonnaise
- 3 tablespoons pesto sauce
- 4 ciabatta rolls, buttered and lightly toasted
- Pickled banana peppers, for garnish
- Heat olive oil in a large skillet over medium-high. Saut thinly sliced onion and red bell pepper until onions are translucent and peppers soften, about 6-8 minutes. Stir in tomato paste and cook 1 more minute. Remove from heat.
- Preheat outdoor grill to medium-high.
- Combine spicy and sweet Italian sausage in a bowl; mix well and form into 4 patties. Grill 4-5 minutes per side until cooked through. Top each with sauted onions and peppers, then 2 provolone slices. Cover grill to melt cheese.
- Mix mayonnaise and pesto in a small bowl; spread on toasted ciabatta rolls. Assemble burgers with pickled banana peppers and serve hot for an irresistible burst of Italian flavors.
