  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, seeds removed and thinly sliced
  • 1 tablespoon tomato paste
  • 12 ounces spicy Italian sausage (remove casings if using links)
  • 12 ounces sweet Italian sausage (remove casings if using links)
  • 8 slices provolone cheese
  • 1/4 cup mayonnaise
  • 3 tablespoons pesto sauce
  • 4 ciabatta rolls, buttered and lightly toasted
  • Pickled banana peppers, for garnish
  1. Heat olive oil in a large skillet over medium-high. Saut thinly sliced onion and red bell pepper until onions are translucent and peppers soften, about 6-8 minutes. Stir in tomato paste and cook 1 more minute. Remove from heat.
  2. Preheat outdoor grill to medium-high.
  3. Combine spicy and sweet Italian sausage in a bowl; mix well and form into 4 patties. Grill 4-5 minutes per side until cooked through. Top each with sauted onions and peppers, then 2 provolone slices. Cover grill to melt cheese.
  4. Mix mayonnaise and pesto in a small bowl; spread on toasted ciabatta rolls. Assemble burgers with pickled banana peppers and serve hot for an irresistible burst of Italian flavors.
