Easy Ginger Pineapple Fizz

Ingredients
- 1/2 cup granulated sugar
- One 2-inch piece fresh ginger root, sliced thin
- 2 cups fresh pineapple juice
- 1 liter soda water
- Ice cubes
- 6 ounces optional spiced rum
- 4 chunks of fresh pineapple

Instructions
- In a medium saucepan on medium heat, combine the granulated sugar with 1/2 cup of water and the sliced ginger pieces. Heat until the mixture simmers so the sugar completely dissolves, then take off the heat and let it cool down to room temperature.
- In a large mixing pitcher, combine the prepared ginger simple syrup, fresh pineapple juice and soda water together. Distribute into glasses filled with ice cubes and stir in 1 1/2 ounces of spiced rum to each glass, if desired. Top each serving with a fresh pineapple chunk for garnish.
