Ingredients

  • One 3-pound bluefish, cleaned, head and tail removed, butterflied
  • 2 tablespoons fresh lemon juice
  • 1/2 cup plain dry bread crumbs
  • 3 cloves garlic, finely minced
  • 2 tablespoons finely chopped fresh parsley leaves
  • 1/2 cup olive oil
  • 1 lemon, sliced into 1/4-inch thick rounds
  • Lemon wedges for garnish (optional)

Instructions

  1. Preheat your oven to 350F (175C). Line a broiler pan with aluminum foil and place the butterflied fish on the foil. Drizzle generously with lemon juice. In a small bowl, combine bread crumbs, garlic, and parsley. Slowly add olive oil while mixing with a fork until the mixture holds together slightly. Spread this flavorful coating evenly over the fish.
  2. Arrange lemon slices overlapping slightly in a row along the center of the fish, nestling them into the bread crumb coating. Bake until the fish easily separates from the bone, approximately 30 minutes.
  3. Remove the fish from the oven and switch your oven to broil. Return the fish to the oven and broil until the bread crumbs turn lightly golden and crispy, about 4 minutes. Serve immediately, garnished with fresh lemon wedges if desired.
