Ingredients
- One 3-pound bluefish, cleaned, head and tail removed, butterflied
- 2 tablespoons fresh lemon juice
- 1/2 cup plain dry bread crumbs
- 3 cloves garlic, finely minced
- 2 tablespoons finely chopped fresh parsley leaves
- 1/2 cup olive oil
- 1 lemon, sliced into 1/4-inch thick rounds
- Lemon wedges for garnish (optional)
Instructions
- Preheat your oven to 350F (175C). Line a broiler pan with aluminum foil and place the butterflied fish on the foil. Drizzle generously with lemon juice. In a small bowl, combine bread crumbs, garlic, and parsley. Slowly add olive oil while mixing with a fork until the mixture holds together slightly. Spread this flavorful coating evenly over the fish.
- Arrange lemon slices overlapping slightly in a row along the center of the fish, nestling them into the bread crumb coating. Bake until the fish easily separates from the bone, approximately 30 minutes.
- Remove the fish from the oven and switch your oven to broil. Return the fish to the oven and broil until the bread crumbs turn lightly golden and crispy, about 4 minutes. Serve immediately, garnished with fresh lemon wedges if desired.
