Ingredients

Spicy Chicken Seasoning:

  • 1 tablespoon seasoning salt
  • 1 tablespoon crushed red pepper flakes
  • 2 teaspoons black pepper
  • 2 teaspoons cayenne pepper
  • 2 teaspoons poultry seasoning
  • 1 teaspoon lemon-pepper
  • 12 whole chicken wings, cut in 1/2 at the joint

Spicy Chicken Batter:

  • 2 eggs
  • 2 tablespoons hot sauce
  • 1 tablespoon crushed red pepper flakes
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 2 cups all-purpose flour
  • Vegetable oil, to fry

Spicy Dipping Sauce:

  • 1 cup sour cream
  • 2 tablespoons horseradish
  • 1/4 tablespoon chili sauce
  • 1/2 teaspoon cayenne pepper
  • Salt and freshly ground black pepper

Instructions

  1. Combine the seasoning salt, crushed red pepper flakes, black pepper, cayenne, poultry seasoning and lemon-pepper in a small bowl; set aside 2 tablespoons of this blend in a separate bowl.
  2. Rinse the wings under cold water, transfer them to a shallow baking dish, and sprinkle evenly with the seasoning mix; cover and refrigerate to marinate for 1 hour.
  3. In a medium bowl whisk together the eggs, hot sauce, crushed red pepper flakes, black pepper and cayenne to form the wet batter; set aside. Put the flour into a shallow dish or pie plate for dredging.
  4. Heat vegetable oil in a large deep-fryer or a heavy Dutch oven to 350F, using a thermometer to check the temperature.
  5. Dip each wing first into the egg mixture, then coat with flour. Fry the wings in batches (about 3 at a time) for 8-10 minutes, turning occasionally, until they are cooked through and deeply golden. Drain on a paper towel-lined sheet tray and allow the oil to return to temperature before adding more wings. Sprinkle finished wings with the reserved seasoning for an extra kick.
  6. Serve the wings with the Spicy Dipping Sauce.

Stir all dipping sauce ingredients together in a small bowl until smooth; season to taste with salt and freshly ground black pepper.
