Ingredients
Spicy Chicken Seasoning:
- 1 tablespoon seasoning salt
- 1 tablespoon crushed red pepper flakes
- 2 teaspoons black pepper
- 2 teaspoons cayenne pepper
- 2 teaspoons poultry seasoning
- 1 teaspoon lemon-pepper
- 12 whole chicken wings, cut in 1/2 at the joint
Spicy Chicken Batter:
- 2 eggs
- 2 tablespoons hot sauce
- 1 tablespoon crushed red pepper flakes
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
- 2 cups all-purpose flour
- Vegetable oil, to fry
Spicy Dipping Sauce:
- 1 cup sour cream
- 2 tablespoons horseradish
- 1/4 tablespoon chili sauce
- 1/2 teaspoon cayenne pepper
- Salt and freshly ground black pepper
Instructions
- Combine the seasoning salt, crushed red pepper flakes, black pepper, cayenne, poultry seasoning and lemon-pepper in a small bowl; set aside 2 tablespoons of this blend in a separate bowl.
- Rinse the wings under cold water, transfer them to a shallow baking dish, and sprinkle evenly with the seasoning mix; cover and refrigerate to marinate for 1 hour.
- In a medium bowl whisk together the eggs, hot sauce, crushed red pepper flakes, black pepper and cayenne to form the wet batter; set aside. Put the flour into a shallow dish or pie plate for dredging.
- Heat vegetable oil in a large deep-fryer or a heavy Dutch oven to 350F, using a thermometer to check the temperature.
- Dip each wing first into the egg mixture, then coat with flour. Fry the wings in batches (about 3 at a time) for 8-10 minutes, turning occasionally, until they are cooked through and deeply golden. Drain on a paper towel-lined sheet tray and allow the oil to return to temperature before adding more wings. Sprinkle finished wings with the reserved seasoning for an extra kick.
- Serve the wings with the Spicy Dipping Sauce.
