- Zest one orange and reserve the zest. For each orange, trim about 1/4 inch off both ends. Stand the orange on a cutting board and, moving from top to bottom, slice away the peel and white pith. Hold the peeled orange over a bowl and, using a knife, cut on both sides of each membrane down to the center to free the segments into the bowl. (Whole segments are ideal but not required.) Squeeze the leftover membrane over a separate bowl to collect any remaining juice; combine those juices with the segments. Repeat with the remaining oranges.
- In a medium skillet, melt the butter over medium heat. Add the cinnamon stick and a pinch of cayenne, stirring until fragrant, about 1 minute. Pour in the orange juice, reserved zest and honey, then bring the mixture to a gentle simmer. Cook uncovered, swirling occasionally, until it reduces into a glaze, about 7 minutes. Stir in the orange segments and warm through briefly. Remove from heat and discard the cinnamon stick. Serve spooned over toasted waffles, pancakes or French toast.
