Ingredients
- Butter, for greasing the pan
- 1 1/4 cups all-purpose flour, plus extra for dusting the pan
- 3/4 cup sugar
- 2 eggs
- 1/3 cup olive oil
- 1 teaspoon vanilla extract
- Juice and zest of 1 orange (about 3 tablespoons juice and 1 tablespoon zest)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Confectioners' sugar for dusting
Directions
1. Preheat the oven to 350F (175C). Grease a 9-inch round cake pan with butter and lightly dust with flour.
2. In a medium bowl, beat the sugar and eggs on medium speed until pale and fluffy. With the mixer running, slowly add the olive oil and vanilla, then stir in the orange juice and zest until combined.
3. In another bowl, sift together the flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet mixture in two additions, mixing gently on low speed just until combined.
4. Pour the batter into the prepared pan and bake 2530 minutes, or until a toothpick inserted in the center comes out clean.
5. Let the cake cool for about 15 minutes, dust with confectioners' sugar, slice, and serve. Enjoy!
