  • 3 bunches carrots, peeled
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • Kosher salt
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon orange zest
  • 1/2 cup fresh orange juice
  • 1/2 teaspoon ground black pepper

  1. Slice the carrots on a diagonal into roughly 1-inch thick pieces (about 5 cups total). In a wide saut pan, combine 1/2 cup water, butter, honey, 2 teaspoons kosher salt, and grated ginger. Bring to a rolling boil, add carrots, cover, and simmer on medium-low for 5 minutes. Uncover and cook 20 minutes until liquid evaporates (increase heat last 5 minutes if needed).
  2. Stir in orange zest and juice, tossing to coat. Simmer uncovered 5 minutes until carrots are tender-firm and sauce glazes shiny. Add pepper and 1 more teaspoon salt to taste.
