Ingredients
- 8 ounces yellowtail, cut into medium dice
- 1 tablespoon red pepper, diced
- 1 yellow pepper, diced
- 1 tablespoon cilantro leaves, chopped
- 1 jalapeo, finely minced
- 2 limes, juiced
- 1 tablespoon coconut milk
- 1 shallot, minced
- 1/2 cucumber, hollowed out to create 4 serving cups
Directions
- Combine all ingredients except the cucumber cups and allow the mixture to marinate for 10 minutes.
- Spoon the ceviche evenly into the cucumber cups and serve.
