  • 1/3 cup low-sodium blond or white miso
  • 1/4 cup dark brown sugar
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons mirin (Japanese cooking wine)
  • Toasted sesame seeds and scallions, for garnish, optional

  2. Wash the fish fillets and pat them thoroughly dry with paper towels. In a bowl, whisk together the miso, brown sugar, sesame oil, and mirin until the sugar fully dissolvescreating a glossy, umami-packed glaze that will elevate your cod.
  3. Spread about 2 tablespoons of the mixture over each fillet. Let them marinate for at least 30 minutes (or up to 1 hour for deeper flavor).
