Discover the irresistible fusion of shrimp scampi and pizza! Indulge in tender shrimp atop golden pizza dough, blanketed in melted mozzarella and a zesty lemon-garlic butter sauce bursting with freshness. Ingredients

  • 3 tablespoons unsalted butter
  • 3 cloves garlic, finely minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/3 cup dry white wine
  • Zest of half a lemon, finely grated
  • Kosher salt and freshly ground black pepper
  • All-purpose flour, for dusting
  • 1 pound refrigerated pizza dough, brought to room temperature
  • 1/2 pound medium peeled and deveined shrimp, tails removed and halved lengthwise
  • 3 ounces whole-milk mozzarella cheese, shredded
  • 1/4 cup flat-leaf parsley, roughly chopped
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Place an inverted baking sheet on a rack in the center of the oven and preheat to 450F. Take another baking sheet, invert it, lay a sheet of parchment paper on top, and set this aside.
  2. In a small saucepan over medium heat, melt the butter. Add the garlic and crushed red pepper flakes, cooking until fragrant, about 2 minutes. Pour in the white wine, letting it reduce until the alcohol scent dissipates and the sauce turns golden, approximately 4 to 5 minutes. Remove from heat, stir in the lemon zest, season with salt and pepper, then set aside.
  3. Lightly flour the parchment paper on top of the inverted baking sheet. On a floured surface, roll out the dough into a 12-inch circle and transfer it to the parchment. Evenly distribute the shrimp on the dough, leaving a 1/2-inch border around the edges. Spoon the butter sauce over the shrimp and use a pastry brush to spread it to the dough's edges. Sprinkle the shredded mozzarella over the top, staying within the border.
  4. Transfer the baking sheet with the pizza onto the preheated inverted baking sheet in the oven. Bake until the crust is crisp and the shrimp is fully cooked, about 12 to 14 minutes. Remove the pizza, sprinkle with parsley and freshly grated Parmesan, slice into wedges, and serve immediately.
