Ingredients

  • 2 (6-ounce) cans chunk light tuna in water, thoroughly drained
  • 1/4 cup minced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped kalamata olives
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon zest from lemon
  • 2 tablespoons freshly squeezed juice from lemon
  • Salt to taste
  • Freshly ground black pepper to taste
  • 6 cups pre-washed mixed greens (approximately 3 ounces)
  • 4 whole-grain wrap breads (approximately 2 ounces each)
  • 2 large tomatoes, sliced

Instructions

  1. In a medium mixing bowl, combine the drained tuna, minced red onion, fresh parsley, and kalamata olives.
  2. In a small bowl, whisk the extra virgin olive oil, lemon zest, lemon juice, salt, and pepper until smooth. Toss two-thirds of the dressing with the tuna mixture. Dress the greens with the remainder.
