Ingredients

  • 6 to 8 ripe tomatoes
  • 4 green onions
  • 1 cup extra-virgin olive oil
  • 3 to 4 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • Salt and freshly ground black pepper
  • A handful of fresh parsley leaves, coarsely chopped
  • 12 fresh basil leaves, sliced thinly (chiffonade)

Instructions

  1. Slice the tomatoes into quarters, then cut each wedge in half and place them into a mixing bowl. Trim the tops from the green onions, then thinly slice the white and lighter green parts. Add these to the tomatoes.
  2. In a jar, combine the olive oil, balsamic vinegar, brown sugar, and a pinch of salt and pepper. Put the lid on tightly and shake well to blend the dressing. Pour this mixture over the tomatoes and gently toss to coat.
  3. Mix in the chopped herbs gently to evenly distribute. Cover the bowl and chill it in the refrigerator for a couple of hours before serving to allow flavors to meld.
