Marinated Tomato Salad with Herbs

Ingredients
- 6 to 8 ripe tomatoes
- 4 green onions
- 1 cup extra-virgin olive oil
- 3 to 4 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- Salt and freshly ground black pepper
- A handful of fresh parsley leaves, coarsely chopped
- 12 fresh basil leaves, sliced thinly (chiffonade)

Instructions
- Slice the tomatoes into quarters, then cut each wedge in half and place them into a mixing bowl. Trim the tops from the green onions, then thinly slice the white and lighter green parts. Add these to the tomatoes.
- In a jar, combine the olive oil, balsamic vinegar, brown sugar, and a pinch of salt and pepper. Put the lid on tightly and shake well to blend the dressing. Pour this mixture over the tomatoes and gently toss to coat.
- Mix in the chopped herbs gently to evenly distribute. Cover the bowl and chill it in the refrigerator for a couple of hours before serving to allow flavors to meld.
