Ingredients:
- 1/2 vanilla bean
- 1 1/2 cups milk
- 1 1/2 cups heavy cream
- 1/2 cup maple sugar
- 15 whole allspice berries
- 6 whole cloves
- 4 cinnamon sticks
- Small piece nutmeg
- 1 cup pure maple syrup, grade B
- 7 large egg yolks
- Pinch fine sea salt
- 2 tablespoons bourbon or dark rum (Recommended: Myers's)
- 1 teaspoon maple extract
- 2 cups Walnut Brittle, chopped, recipe follows
Walnut Brittle

- 2 cups sugar
- 1/2 cup water
- Cooking spray
- 1 cup walnuts, toasted and coarsely chopped

Instructions
- Slice the vanilla bean in half lengthwise and scrape out the seeds. Place the seeds, pod halves, milk, cream, spices, and maple sugar into a heavy-bottomed, medium saucepan. Warm over low heat until just scalding. Remove from heat and steep for 1 hour. Meanwhile, simmer maple syrup over medium-low heat until reduced by one-third.
- In a large bowl, whisk egg yolks and salt until blended. Return cream mixture to a gentle simmer and stir in reduced syrup.
- Gently whisk hot cream-syrup mixture into yolks to temper. Pour back into saucepan; cook over medium heat, stirring constantly and scraping bottom to avoid scorching. Custard is ready when it thickens and coats the spoondo not boil.
- Strain through fine-mesh sieve, squeezing vanilla pod for liquid, then discard pod. Stir in bourbon and maple extract. Cool over ice bath, stirring occasionally.
- Churn in ice cream maker per manufacturer's instructions. Transfer to container and freeze until firm.
- Fold in chopped walnut brittle and serve this irresistible, spice-infused delight!
Walnut Brittle Instructions
- Combine sugar and water in medium saucepan. Cook over high heat to deep amber. Lightly spray baking sheet. Off heat, stir in walnuts; pour onto sheet. Cool, harden, and break into pieces.
