Whip up this irresistible Kielbasa Melt with Tangy Slaw a quick, flavor-packed sandwich that's perfect for busy weeknights! Crispy kielbasa, gooey cheddar, and a spicy jalapeo kick meet a refreshing, herby coleslaw you'll crave again and again.
Ingredients:
3 tablespoons sugar
1/2 cup apple cider vinegar
3 tablespoons vegetable oil
1 16-ounce bag shredded coleslaw mix
1/2 cup roughly chopped fresh herbs (such as parsley and dill)
Kosher salt and freshly ground pepper
8 ounces kielbasa, sliced diagonally 1/4 inch thick
2 tablespoons whole-grain mustard
8 slices rye bread
8 slices cheddar cheese (about 6 ounces)
1/2 jalapeo pepper, thinly sliced (seeds removed for less heat)
2 tablespoons unsalted butter

- Make the slaw: In a large bowl, whisk sugar and vinegar until dissolved. Add 2 tablespoons oil, then toss in coleslaw mix and herbs. Season with salt and pepper let it mingle for vibrant flavor!
- Brown the kielbasa: Heat remaining 1 tablespoon oil in a large nonstick skillet over medium-high. Cook slices until golden on both sides, about 2 minutes. Drain on paper towels.
- Assemble sandwiches: Spread mustard on rye bread. Layer cheese, kielbasa, jalapeo, and more cheese between slices.
- Cook to perfection: Wipe skillet, melt 1/2 tablespoon butter over medium heat. Add 2 sandwiches, press with another skillet. Cook until golden and melty, 4-5 minutes per side, adding butter when flipping. Repeat with rest. Serve hot with slaw for a drool-worthy bite!
