Jamaican Jerked BBQ Sauce

Ingredients
- 1 pint plain tomato sauce
- 1 cup molasses
- 1 cup stout or full-flavored beer, remainder to be enjoyed by the cook
- 1 tablespoon ground allspice
- 1 tablespoon garlic powder
- 1 teaspoon ground cinnamon
- 1 teaspoon powdered ginger
- 1 teaspoon chili powder
- 1 teaspoon cumin or brown curry powder
- 3 tablespoons hot sauce (or as desired)
- 4 tablespoons soy sauce
- 5 tablespoons vegetable oil
- Ribs
- Spices, to taste
Instructions
- Combine all sauce ingredients in a large pot or saucepan. Heat over medium heat, stirring occasionally, until the mixture thickens and reduces slightly. Allow to cool, then transfer to plastic containers or jars and store in the refrigerator until ready to use.
- Preheat grill to high heat.
- Place ribs on the grill without sauce and sear both sides using tongs (not forks, which can cause juices to escape). Brush both sides generously with sauce. Place on grill and sear the first side for about 5 minutes. Turn and reapply sauce to the seared side. Remove after another 5 minutes. Slice and serve.
