Ingredients

  • Nonstick spray for coating
  • 2 and 1/2 pounds of fresh, ripe peaches, pitted and roughly chopped
  • 1 tablespoon cornstarch
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 3/4 cup all-purpose flour
  • 2 tablespoons ground flaxseed
  • 1/4 teaspoon kosher salt
  • 3 tablespoons unsalted butter, very cold and cut into bits
  • 2 tablespoons low-fat buttermilk
  • Vanilla nonfat yogurt or frozen yogurt, for serving (optional)

Instructions

  1. Preheat your oven to 375F. Lightly spray eight 6-ounce ramekins with nonstick spray and place them on a rimmed baking sheetready for that irresistible bake!
  2. In a large bowl, toss the chopped peaches with cornstarch and 2 tablespoons sugar. Let them sit for 10 minutes to release their sweet juices, then divide evenly into the ramekins. Watch the magic as they glisten!
  3. In another bowl, whisk flour, remaining 1/2 cup sugar, flaxseed, and salt. Cut in the cold butter with a fork or pastry blender until crumbly. Stir in buttermilk just until clumps formdon't overmix for that perfect tender topping.
