  • 1 cup (250 ml) roasted salted almonds
  • 1 cup (250 ml) grain-based breakfast cereal
  • 1/2 cup (125 ml) honey
  • 1/4 cup (60 ml) butter
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon almond extract
  • Coarse sea salt, to taste

Instructions

  1. Preheat your oven to 250F (120C) and generously coat a large roasting pan with nonstick cooking spray.
  2. Pop the popcorn using an air popper or stovetop method: Heat the oil in a large pot over medium heat, add kernels, cover, and shake until popping slows.
  3. Transfer popcorn to the roasting pan or a large bowl; toss with almonds and cereal. Set aside.
  4. In a small saucepan, combine honey, butter, and kosher salt. Bring to a low boil over medium heat and simmer for 7 minutes. Remove from heat and stir in almond extract.
  5. Pour the warm honey mixture over the popcorn; stir thoroughly to coat every piece evenly.
  6. Sprinkle with coarse sea salt, then bake, stirring every 10-15 minutes, until crispy (40-45 minutes total).
