  • 1 cup white wine vinegar
  • 2 tablespoons sugar
  • 1 teaspoon coriander seeds
  • 1 teaspoon kosher salt
  • 1 star anise
  • 1 bay leaf
  • 1 garlic clove
  • 2 cups radishes, thinly sliced (about 8 oz)

Homemade Roast Beef:

  • 1 tablespoon minced fresh rosemary
  • 1 tablespoon minced fresh thyme
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 3 garlic cloves, finely chopped
  • 1 boneless beef eye round roast, about 4 lbs
  • 2 tablespoons olive oil
