- 2 tablespoons extra-virgin olive oil
- 1 small onion, finely chopped
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- Kosher salt
- 1 cup chicken broth
- Chopped fresh parsley leaves, for garnish
Instructions:
- Rinse the basmati rice several times until the water runs clearthis ensures fluffy, perfect grains every time.
- Heat the olive oil in a medium saucepan (about 3 quarts) over medium heat. Add the chopped onions and saut, stirring occasionally, until they become translucent and lightly golden, about 5 minutes. - Pour in the chicken broth and 2 cups of water, then increase heat to medium-high.
- Once the mixture reaches a boil, reduce the heat to medium and cover the pot. Cook until the liquid is fully absorbed and the rice is tender, about 15 to 20 minutes.
- Remove the pot from the heat and let it stand, covered, for 5 minutes to finish steaming. Before serving, fluff the rice gently with a fork and garnish with fresh parsley for a pop of color and freshness.
