Ingredients:
- 2 tablespoons vegetable oil
- 1 large egg, lightly beaten
- 1/2 pound ground beef
- Kosher salt
- 1 cup chopped broccoli florets
- 1 teaspoon minced garlic
- 1 teaspoon freshly grated ginger
- 1 teaspoon soy sauce
- 3 cups cold, previously cooked longgrain white rice
- 2 tablespoons finely sliced scallions
- 1 tablespoon roasted salted peanuts
Directions:
- Heat a large nonstick skillet or wok over high heat and add 1 tablespoon oil. When shimmering, pour in the beaten egg and tilt the pan so it forms a thin layer; cook until halfset (about 10 seconds), then slide the egg onto a plate.
- Add the ground beef to the pan, season with 1/4 teaspoon salt, and cook, breaking up the meat, until browned, about 4 minutes. Transfer beef to a bowl.
- Add the remaining tablespoon oil to the pan. Stirfry the broccoli with garlic, ginger, soy sauce, and another 1/4 teaspoon salt until the broccoli is crisptender, 23 minutes.
- Add the rice, breaking up any clumps, and spread it in the skillet; cook about 3 minutes to warm through. Return the egg (break it up) and cooked beef with any juices to the skillet; stir to combine and cook about 1 minute. Taste and adjust salt if needed.
- Scatter scallions and peanuts over the finished dish and serve warm.
