Pizza Dough Ingredients:

  • 1 (1/4-ounce) packet instant yeast (2 1/4 teaspoons)
  • 3/4 cup water heated to 105-115 degrees F
  • 1 3/4 to 2 cups unbleached all-purpose flour, additional for kneading and dredging
  • 1 1/2 teaspoons salt
  • 2 teaspoons olive oil, plus 1 teaspoon for coating the bowl
  • Cilantro Pesto, recipe follows
  • 8 ounces buffalo mozzarella, sliced thin
  • Grilled Shrimp, recipe follows
  • Fresh cilantro sprigs, for topping

Cilantro Pesto Ingredients:

  • 3/4 cup fresh cilantro
  • 1/4 cup fresh parsley
  • 2 garlic cloves, roughly chopped
  • 2 tablespoons pine nuts
  • 1/4 cup Parmesan cheese, grated
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper

Grilled Shrimp Ingredients:

  • 16 large shrimp, cleaned and deveined
  • Olive oil
  • Salt and freshly ground black pepper

Pizza Dough Instructions:

  1. Fire up your kitchen adventure! In a small bowl, whisk the yeast into 1/4 cup warm water (105-115F) and let it bloom for 5 minutes until foamy. In a large bowl, mix 1 3/4 cups flour with salt. Add the yeast mixture, remaining water, and 2 teaspoons olive oil. Stir until a shaggy dough forms, then knead on a floured surface until smooth and elastic, about 5-7 minutes. Oil a bowl with 1 teaspoon olive oil, add the dough, cover, and let rise in a warm spot until doubled, 1-1 1/2 hours.
  2. Preheat your grill to high. Punch down the dough, divide into 4 balls, and roll each into an 8-inch round. Brush with oil and grill until golden on both sides.
