Transform simple baguettes into irresistible grilled bread bursting with roasted garlic and fresh rosemary flavors. This easy recipe delivers warm, buttery slices perfect for any gatheringfire up the grill and watch them disappear!
Ingredients
- 10 large cloves garlic, peeled but left whole
- 1 fresh rosemary sprig, 6 inches long
- cup extra-virgin olive oil
- 1 stick unsalted butter, at room temperature
- Salt and pepper
- 2 baguettes (not sourdough), pound each
- cup freshly grated Parmesan, optional

Instructions
- Place the garlic, rosemary, and olive oil in a small skillet and warm gently until the oil just starts to simmer. Turn the cloves in the oil and saut for 10 minutes more. Remove from heat and let cool for 15 minutes.
- Remove the garlic cloves from the oil (save the oil) and mash them into a paste using a knife or mortar and pestle. Strip the leaves from the rosemary sprig and finely chop them. In a bowl, mix together the garlic paste, chopped rosemary, and butter until smooth. Season with salt and pepper.
- Slice the baguettes in half lengthwise. Spread the seasoned butter mixture on the cut sides and drizzle with a bit of the reserved garlic oil. Sprinkle with Parmesan if desired, close the baguettes, and wrap each in aluminum foil. Grill over medium heat or place in a bed of slow coals for 10 to 15 minutes. Slice into 2-inch pieces and serve right away.
