Instructions
- Preheat your oven to 400F (204C) and fire up the grill for an irresistible smoky twist.
- Rinse and quarter the potatoes. Squeeze juice from the lemons, then finely slice the peel into 1/4-inch strips after removing the white pithzest up your dish with bright citrus flair!
- In a roasting pan, combine lemon peel, half the juice, roasted garlic, rosemary, and garlic-infused oil. Toss in potato quarters, coat thoroughly, cover, and marinate overnight for flavors that burst with every bite.
- Drain potatoes in a colander, saving the marinade. Grill potatoes on both flat sides until gorgeous marks appearinfuse that perfect char!
