Instructions

  1. Preheat your oven to 400F (204C) and fire up the grill for an irresistible smoky twist.
  2. Rinse and quarter the potatoes. Squeeze juice from the lemons, then finely slice the peel into 1/4-inch strips after removing the white pithzest up your dish with bright citrus flair!
  3. In a roasting pan, combine lemon peel, half the juice, roasted garlic, rosemary, and garlic-infused oil. Toss in potato quarters, coat thoroughly, cover, and marinate overnight for flavors that burst with every bite.
