Ingredients
- 1 cup crumbled dry apple chips
- 1 1/2 teaspoons black peppercorns
- 1 teaspoon coriander seeds
- 1/4 teaspoon whole allspice
- 1/4 cup sugar
- 2 tablespoons kosher salt
- 1 tablespoon sweet paprika
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon

Directions
- Use a spice grinder to finely grind the apple chips into a powder. (The drier the powder, the better, and your rub will stay clump-free for longer.) Transfer the powder to a bowl.
- Grind the peppercorns, coriander seeds, and allspice into a fine powder, then add to the apple powder.
- Stir in the sugar, salt, paprika, ginger, and cinnamon until thoroughly mixed. If not using right away, store in an airtight container in a cool, dark spot for up to 30 days.
