Ingredients

  • Cooking spray
  • 3 teaspoons olive oil
  • 1 large shallot, thinly sliced
  • 1/2 teaspoon lemon zest
  • Kosher salt
  • 4 large eggs plus 4 large egg yolks
  • 3 cups half-and-half
  • Freshly ground black pepper
  • 1/4 pound sliced deli ham, torn into bite-size pieces
  • 4 ounces shredded aged fontina (about 1 1/2 cups)
  • 2 tablespoons cornstarch
  • 5 ounces baby spinach (about 6 cups)
  • 1/4 cup grated Parmesan

Instructions

  1. Prepare a 6-quart slow cooker by lining the insert with a large sheet of foil that extends about 2 inches up the sides. Generously coat with cooking spray.
  2. Warm 1 teaspoon of the oil in a big skillet over medium-high heat. Add the sliced shallots and saut, stirring often, until they become lightly golden, around 1 minute. Take off the heat and mix in the lemon zest along with a small pinch of salt.
  3. In a spacious bowl, beat the eggs, egg yolks, half-and-half, 1 teaspoon salt, and several grinds of black pepper until well combined.
  4. Move the sauted shallots to a medium bowl. Include the ham pieces, shredded fontina, and cornstarch, then toss everything together. Spread this mixture evenly across the base of the foil-lined insert. Carefully pour the egg mixture on top.
