Ingredients

- 3 teaspoons olive oil
- 1 large shallot, thinly sliced
- 1/2 teaspoon lemon zest

- 4 large eggs plus 4 large egg yolks

- 5 ounces baby spinach (about 6 cups)

Instructions
- Prepare a 6-quart slow cooker by lining the insert with a large sheet of foil that extends about 2 inches up the sides. Generously coat with cooking spray.
- Warm 1 teaspoon of the oil in a big skillet over medium-high heat. Add the sliced shallots and saut, stirring often, until they become lightly golden, around 1 minute. Take off the heat and mix in the lemon zest along with a small pinch of salt.
- In a spacious bowl, beat the eggs, egg yolks, half-and-half, 1 teaspoon salt, and several grinds of black pepper until well combined.
- Move the sauted shallots to a medium bowl. Include the ham pieces, shredded fontina, and cornstarch, then toss everything together.
