Ingredients
- 2 tablespoons coconut oil
- 6 scallions, separated whites and greens, thinly sliced
- 4 garlic cloves, minced
- 1 serrano chili, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon lime zest, plus lime wedges for garnish
- Kosher salt and freshly ground black pepper, to taste
- 1 1/2 cups wild rice
Instructions
- Place a medium saucepan with a lid over medium-high heat. Melt the coconut oil, then add the scallion whites, minced garlic, and serrano pepper. Cook while stirring often until the garlic and scallions begin to brown, about 1 to 2 minutes.
- Stir in the cumin, lime zest, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix in the wild rice, coating each grain well with the seasoning.
- Pour in 2 to 3 cups of water according to your rice package instructions and stir gently. Bring the mixture to a simmer, then cover with the lid and lower the heat to a gentle simmer.
- Allow the rice to cook until all liquid has evaporated and the rice is tender, approximately 45 minutes.
- Before serving, fluff the rice with a fork and sprinkle the sliced green parts of the scallions on top. Squeeze fresh lime juice over the dish as a finishing touch.
