Girlfriend Toast Recipe
Ingredients
- 3 tablespoons I Can't Believe It's Not Butter! Original Soft Spread
- 3 1/2 tablespoons natural cane turbinado sugar
- A pinch (about 1/16 teaspoon) ground cardamom
- A pinch (about 1/16 teaspoon) nutmeg
- Finely grated zest of one lemon
- 4 slices gluten-free bread
- 4 tablespoons mascarpone cheese
- 1 pint fresh raspberries
- Twists of lemon peel and a few fresh mint leaves for garnish (optional)

Instructions
- Preheat your oven to 450F.
- In a small dish, mix together the I Can't Believe It's Not Butter! Original Spread, turbinado sugar, ground cardamom, nutmeg, and lemon zest until well combined.
- Evenly spread this mixture onto each of the four slices of gluten-free bread. Arrange on a parchment-lined standard baking sheet. Bake for 5 to 7 minutes, or until the topping starts to caramelize.
- Remove from the oven and cool for a couple of minutes. Smooth 1 tablespoon mascarpone cheese over each slice, then top with fresh raspberries. Garnish with lemon peel curls and mint sprigs if desired.
