Ingredients

  • 3 garlic cloves, minced
  • 2 tablespoons canola oil
  • 3 large baking potatoes (about 12 ounces each)
  • 1/2 teaspoon salt
  • 1 tablespoon finely chopped fresh parsley

Directions

  1. Heat the oven to 450F.
  2. Combine the garlic and oil in a small saucepan and cook over medium heat for 2 minutes. Using a fine mesh strainer, drain the garlic from the oil. Keep both the strained garlic and oil for later use.
  3. Slice potatoes into 1/4-inch thick sticks. In a large mixing bowl, toss the potatoes with the infused oil and 1/2 teaspoon salt. Spray a baking sheet with non-stick spray and evenly arrange potatoes in one layer. Bake for approximately 35 minutes, or until they are crisp and golden brown.
  4. Once cooked, lift the fries from the tray with a metal spatula. Toss immediately with the chopped parsley, reserved fried garlic, and more salt if desired. Serve right away for best texture.
