Ingredients
- 3 garlic cloves, minced
- 2 tablespoons canola oil
- 3 large baking potatoes (about 12 ounces each)
- 1/2 teaspoon salt
- 1 tablespoon finely chopped fresh parsley
Directions
- Heat the oven to 450F.
- Combine the garlic and oil in a small saucepan and cook over medium heat for 2 minutes. Using a fine mesh strainer, drain the garlic from the oil. Keep both the strained garlic and oil for later use.
- Slice potatoes into 1/4-inch thick sticks. In a large mixing bowl, toss the potatoes with the infused oil and 1/2 teaspoon salt. Spray a baking sheet with non-stick spray and evenly arrange potatoes in one layer. Bake for approximately 35 minutes, or until they are crisp and golden brown.
- Once cooked, lift the fries from the tray with a metal spatula. Toss immediately with the chopped parsley, reserved fried garlic, and more salt if desired. Serve right away for best texture.
