Ingredients
- 2 tablespoons non-fat mayonnaise (recommended brand: Miracle Whip Free)
- 2 tablespoons fat-free sour cream
- 1/4 cup orange juice
- 2 boneless, skinless chicken breast halves, cooked and cut into cubes
- 1 cup sliced strawberries
- 2 kiwis, peeled and sliced
- 2/3 cup canned Mandarin oranges in light syrup, drained
- 8 leaves of lettuce
- 3 tablespoons chopped cashews
Instructions
- In a nonmetal bowl, mix together mayonnaise, sour cream, and orange juice. Add the chicken, strawberries, kiwi, and Mandarin oranges, then gently toss until all ingredients are well coated. Cover the bowl and chill in the refrigerator for 2 hours.
- To serve, arrange the mixture over the lettuce leaves and sprinkle with chopped cashews.
