Ingredients:
- 2 cups cooked brown rice
- 1 cup chopped portobello mushrooms
- 1/2 cup shredded carrots
- 1/2 cup panko breadcrumbs
- 1/2 cup chopped green onions
- 1/2 cup diced sweet onions
- 1/2 cup ground flaxseed
- 2 tablespoons chipotle in adobo sauce
- 2 tablespoons sriracha
- 1 teaspoon salt
- 1 teaspoon vegan Worcestershire sauce
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 5 tablespoons olive oil
- 6 brioche buns
- 6 vegan cheese slices (store-bought)
For Toppings:
- Lettuce
- Sliced red onion
- Sliced tomatoes
- Vegan Chipotle Mayo (recipe below)
Black Beans:
- 2 pounds black beans
Vegan Chipotle Mayo:
- 2 cups vegan mayonnaise
- 1/2 cup chipotle in adobo sauce
- 2 tablespoons minced garlic
- 2 tablespoons horseradish
Instructions:
- Combine black beans, cooked rice, mushrooms, carrots, panko, green and sweet onions, ground flaxseed, chipotle, sriracha, salt, vegan Worcestershire, smoked paprika, and red pepper flakes in a bowl. Mix well and shape into 6 patties. Refrigerate and let them firm up overnight.
- Cook the patties in a skillet with olive oil over medium heat, about 5 minutes per side, until heated through and browned. Toast the brioche buns. Place the patties on the bottom halves of the buns and add vegan cheese, lettuce, onion, and tomato slices.
- Spread the vegan chipotle mayo on the top halves of the buns and finish the burgers by placing the tops on.
For the Black Beans:
- Soak the beans in water overnight, then drain and rinse.
- In a large pot, add the soaked beans and 6 cups of water, bring to a boil, then simmer until tender, about 2 to 3 hours. Drain, rinse under cold water, and mash before using in the recipe.
For the Vegan Chipotle Mayo:
- Blend the vegan mayonnaise, chipotle peppers, garlic, and horseradish until smooth and well combined.
