Ingredients
Delmonico Steaks:- 4 Delmonico steaks (1 inch thick, 810 oz each)
- 2 teaspoons extra-virgin olive oil
- Grill seasoning of your choice (Montreal steak seasoning, or just coarse salt and pepper)
Balsamic Onions:- 1 tablespoon extra-virgin olive oil
- 2 large yellow onions, thinly sliced
- 1/4 cup balsamic vinegar
Steak Sauce:- 1 1/2 teaspoons extra-virgin olive oil
- 2 garlic cloves, chopped
- 1 small white boiling onion, diced
- 1/4 cup dry sherry
- 1 cup tomato sauce (8 oz can)
- 1 tablespoon Worcestershire sauce
- Fresh cracked black pepper
Directions
- Heat a sturdy grill pan or flat griddle over high heat and lightly wipe it with extra-virgin olive oil. Season the steaks with your chosen seasoning or simply salt and pepper. Grill about 6 minutes per side for medium, or 8 minutes per side for medium-well. When done, transfer the steaks to a warm platter and let them rest.
- While the steaks cook, make the balsamic onions: in a medium nonstick skillet over medium-high heat, add the olive oil and sliced onions. Saut, stirring occasionally, for 1012 minutes until the onions soften and begin to sweeten. Add the balsamic vinegar and stir, allowing it to reduce and glaze the onions; cook another 35 minutes until the onions turn deep brown.
- For the steak sauce, warm a small saucepan over medium heat and add the olive oil. Saut the garlic and diced onion for about 5 minutes until softened. Add the dry sherry and stir, then mix in the tomato sauce and Worcestershire sauce. Season with freshly cracked black pepper and simmer briefly to blend flavors.
- To serve, place the steaks on plates, spoon the caramelized balsamic onions over each steak, and drizzle with the steak sauce. Serve remaining sauce at the table for extra.
