  • 1 tablespoon whole coriander seeds
  • 2 tablespoons whole cloves
  • 1 1/2 tablespoons whole allspice
  • 5 gallons water
  • 1 pound kosher salt
  • 4 tablespoons cayenne pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons paprika
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 tablespoon dry mustard
  • 1 tablespoon dried dill weed
  • 6 bay leaves, crumbled
  • 10 pounds live crawfish
  • 3 pounds small red potatoes, halved if over 2 inches in diameter
  • 8 ears corn, cut in half
  • 2 heads garlic, separated but unpeeled
  • 1 pound andouille sausage, sliced into 1-inch pieces

Instructions

  1. Fire up your spice grinder: Combine the peppercorns, coriander, cloves, and allspice. Pulse for 10 to 15 seconds until finely ground, releasing their bold aromas that promise an epic boil.
  2. In a massive 40-quart pot, pour in 5 gallons of water. Stir in your freshly ground spices, kosher salt, cayenne, garlic powder, paprika, onion powder, thyme, oregano, dry mustard, dill weed, and crumbled bay leaves. Cover and crank the heat to high for a vigorous boilabout 40 minutes of anticipation-building magic.
  3. Prep your crawfish like a pro: Rinse them thoroughly in their bag, then soak in cold water. Rinse in batches under cold running water 6 to 8 times, discarding debris and dead ones, until the water runs crystal clear. You're crafting perfection!
  4. Once boiling, toss in the potatoes, corn, garlic heads, and sausage. Cover and simmer for 10 minutes, letting those flavors mingle and build excitement.
  5. Add the crawfish, cover, and cook for 3 minutes. Turn off the heat and let it steep covered for 10 minutes. Drain and serve immediatelythis steamy, spice-packed feast will have everyone raving!
