Ingredients
- 1 package chocolate wafer cookies, crushed
- 5 tablespoons unsalted butter, melted
- 1/2 gallon coffee ice cream, softened (leave on the counter 15 to 20 minutes)
- 6 tablespoons coffee-flavored liqueur (suggested: Kahlua), divided
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 2 tablespoons hot fudge sauce
Instructions
- Heat oven to 350F (175C).
- Mix the crushed chocolate wafers with melted butter. Press this mixture firmly along the bottom and sides of a 9-inch pie pan. Bake for 10 minutes, then allow it to cool.
- Using a stand or hand mixer, blend the softened coffee ice cream with 5 tablespoons of coffee liqueur until creamy and smooth. Pour this mixture into the prepared crust, cover with plastic wrap, and freeze for 3 to 4 hours.
- Beat the heavy cream and powdered sugar together until soft peaks appear. Spread the whipped cream over the frozen pie, then place back in the freezer for an additional hour.
- Stir the remaining tablespoon of coffee liqueur into the hot fudge sauce. Drizzle this over the top of the pie before serving.
