Ingredients

  • 1 package chocolate wafer cookies, crushed
  • 5 tablespoons unsalted butter, melted
  • 1/2 gallon coffee ice cream, softened (leave on the counter 15 to 20 minutes)
  • 6 tablespoons coffee-flavored liqueur (suggested: Kahlua), divided
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 2 tablespoons hot fudge sauce

Instructions

  1. Heat oven to 350F (175C).
  2. Mix the crushed chocolate wafers with melted butter. Press this mixture firmly along the bottom and sides of a 9-inch pie pan. Bake for 10 minutes, then allow it to cool.
  3. Using a stand or hand mixer, blend the softened coffee ice cream with 5 tablespoons of coffee liqueur until creamy and smooth. Pour this mixture into the prepared crust, cover with plastic wrap, and freeze for 3 to 4 hours.
  4. Beat the heavy cream and powdered sugar together until soft peaks appear. Spread the whipped cream over the frozen pie, then place back in the freezer for an additional hour.
  5. Stir the remaining tablespoon of coffee liqueur into the hot fudge sauce. Drizzle this over the top of the pie before serving.
