- Freeze the body of your electric ice cream maker overnight it must be fully frozen for perfect results.
- In a medium, heavy-bottomed saucepan, combine the cream, milk, and 1 cup of the sugar. Scrape the seeds from the vanilla bean into the mixture and add the pod. Heat over medium-high until it just begins to boil (watch closely to avoid overflow). Remove from heat.
- In a mixing bowl, beat the egg yolks. Slowly whisk in about 1 cup of the hot cream mixture. Gradually pour the egg mixture back into the saucepan. Cook over medium heat, stirring occasionally, until it thickens to coat the back of a spoon or reaches 170F (about 6-8 minutes). Transfer to a container, cover, and chill in the fridge for 2-3 hours.
- Assemble your ice cream maker and pour in the chilled mixture. Churn for 20-25 minutes per manufacturer's instructions. When nearly frozen, add the chopped bananas and chocolate, stirring gently to swirl in bursts of flavor. Freeze until ready to scoop and savor!
